The Hospitality Industry covers a diverse range of establishments providing hospitality services in the form of accommodation, food and beverage. Competencies gained as a result of undertaking these programs allows students to enter the workforce with the skills and knowledge required to secure an entry level position in a commercial kitchen, leading to a career as a Cook. Employment can be gained working in hotels, clubs, restaurants, casinos, cruise ships, island resorts, hospitals, motels, entertainment centres, employee food service centres, catering businesses and white boats (luxury boats).

The start date for all of the courses below is Monday 13th October 2008.  Students can then enrol every Monday after this.

THH31502 Certificate III in Hospitality (Commercial Cookery) 40 weeks
This program of training is suitable if you wish to pursue a career in the range of occupations associated with the Hospitality industry in areas of commercial cookery. The qualification gained opens a world of opportunities for cooks and kitchen hands. The types of positions that can be sought at a management level (after some operational experience) include: kitchen manager, chef or small business operator. Graduates can expect to work with people from all over the world and see and experience a vast array of food and preparation techniques. Learning Pathways: On successful completion of this course, graduates may consider further study at a higher tertiary level within the vocational education and training sector.

THH51202 Diploma of Hospitality Management (Management Stream) 56 weeks
Competencies gained as a result of undertaking this course will give the student a firm grounding in all aspects of hospitality, assisting them to enter the industry in a supervisory role. Students will be able to manage front line services, plan and control a range of operations, manage financial operations, maintain business compliance within legislative requirements and market effectively to customers. Graduates will also have the skills required to effectively lead, supervise and manage teams of people.

Hospitality Management Pathway 96 weeks
THH31502 Certificate III in Hospitality (Commercial Cookery) and THH51202 Diploma of Hospitality Management (Commercial Cookery Stream)
This course is suitable if you wish to develop hospitality management/supervisory skills in addition to commercial cookery skills. It allows you to complete two full qualifications in a two year period.Students acquire, develop and practice the knowledge and skills required at middle-management level within a hospitality operation. Learning outcomes for this course involve complex highly specific functions relating to commercial cooking, planning, budgeting, financial management strategies and leadership.

Uniforms and Chef’s Kit

**Please note all uniforms and Chef's Kit are included in the price of your tuition.

UNIFORMS:

All students will be provided with the relevant uniform(s) including shoes for their area of study and will be expected to wear the appropriate uniform at all times. Certificate III in Hospitality (Commercial Cookery) will be provided with a practical uniform.

EQUIPMENT:

All students will be issued with the relevant practical equipment for their course.

In the case of a Certificate III in Hospitality (Commercial Cookery) students will be provided with a Chef’s Kit which will include all the kitchen equipment required to complete their qualification.
